Paleo Chocolate Chip Blondies

Ingredients

  • 1/2 cup cashew butter
  • 1 large egg
  • 1/4 cup coconut oil melted/cooled
  • 1/3 cup coconut sugar
  • 1 tbsp vanilla extract
  • 1 cup blanched almond flour
  • 1 tsp baking powder
  • 1 pinch of sea salt
  • dark chocolate chips or chunks

Instructions

  1. Preheat oven to 350°F. Line an 8x8” square baking pan with parchment paper.

  2. In a bowl, whisk together the cashew butter, coconut oil, coconut sugar, egg, and vanilla extract until smooth.

  3. Stir in the almond flour, baking soda, and salt. Fold in the chocolate chunks.

  4. Spread dough evenly in parchment lined pan and bake for 20 minutes.

  5. Let blondies cool completely, and then cut into 16 even squares.

Recipe Notes

In order to keep this recipe paleo, I use 100% cacao and break the bar into chocolate chunks.

  1. These sound amazing…I can’t do cashews or baking powder any idea how it might work with almond butter and no baking powder? If not no worries just thought I’d ask 💕

    1. Hi Kimberly,

      I have made them with almond butter before and they turned out amazing! However, I have not tried making them without baking powder. It will not change the taste to leave the baking powder out, but it may not rise as well. Regardless, they will be tasty!
