Paleo Chocolate Chip Blondies
You will love these paleo, gluten-free and refined sugar free blondies!
- 1/2 cup cashew butter
- 1 large egg
- 1/4 cup coconut oil melted/cooled
- 1/3 cup coconut sugar
- 1 tbsp vanilla extract
- 1 cup blanched almond flour
- 1 tsp baking powder
- 1 pinch of sea salt
- dark chocolate chips or chunks
Preheat oven to 350°F. Line an 8x8” square baking pan with parchment paper.
In a bowl, whisk together the cashew butter, coconut oil, coconut sugar, egg, and vanilla extract until smooth.
Stir in the almond flour, baking soda, and salt. Fold in the chocolate chunks.
Spread dough evenly in parchment lined pan and bake for 20 minutes.
Let blondies cool completely, and then cut into 16 even squares.
In order to keep this recipe paleo, I use 100% cacao and break the bar into chocolate chunks.
