Thai-Inspired Coleslaw

An easy coleslaw with an almond butter dressing with lots of zip from fresh ginger, garlic and lime. Perfect for any summer gathering!

Servings 4 people

Ingredients

Slaw:

  • 4 cups cabbage shredded
  • 1 english cucumber sliced
  • 4 radishes sliced
  • 1 green onion sliced
  • 3 tbsp almonds sliced
  • 3 tbsp sesame seeds

Dressing:

  • 1/4 cup creamy almond butter
  • 2 tbsp coconut aminos
  • 2 tbsp toasted sesame oil
  • 1 tbsp lime juice
  • 2 tsp grated ginger
  • 2 tsp grated garlic
  • sea salt and pepper to taste

Instructions

  • In a large bowl, combine all the coleslaw ingredients.
  • In a small mixing bowl, combine all the dressing ingredients and whisk to combine.
  • Pour the dressing over the coleslaw and stir.
  • Store in the fridge and serve cold.
